Colossal Lamb Kebab

No need for takeaways when you have this recipe. So quick and so easy its a great recipe to make on a Friday night or on a lazy weeknight.

Ingredients

  • 500g diced lamb
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 large flat bread or tortilla
  • 1 small red onion
  • 1 tomato 
  • handful lettuce
  • 1/2 lemon
  • handful chopped coriander
  • handful chopped parsley
  • 2 tbsp natural yogurt- optional

Method

  1. Place lamb, olive oil and spices in a bowl and mix together until combined.
  2. Preheat a large griddle pan or barbecue.
  3. Thread spiced lamb onto kebab skewers and cook over the griddle pan or barbecue for 5 minutes each side or until cooked through.
  4. In a large saucepan, dry fry the flatbread or tortilla until soft.
  5. Remove lamb from skewer and arrange in the middle of the flatbread. Top with onion, tomato, lettuce, coriander and parsley. squeeze over with lemon. Drizzle with natural yogurt and toast in sandwich press for 1 minute to lightly toast kebab if desired.
