Creamy Tuna & Kumara Bake

Ingredients

Method

  • 5 medium sized orange kumara
  • 2 tablespoons butter
  • ½ cup milk
  • 2 185g canned tuna in spring water
  • 1 400g can creamed corn
  • 1 cup peas
  • 1 tablespoon tomato paste
  • 1 cup edam cheese
  • Salt and pepper to season
  1. Preheat oven to bake 180 degrees.
  2. Remove skin and chop kumara into cubes. Place in saucepan with lightly salted hot water and bring to the boil until kumara is soft.
  3. Mash kumara and add butter and milk. Mash until smooth.
  4. Combine kumara mash with tuna, creamed corn, peas and tomato paste.
  5. Spread mixture onto a lightly greased pie or baking dish. Sprinkle cheese over the top and bake for 20minutes or until cheese has melted.
  6. Enjoy!

Notes

  • This dish freezes well so place leftovers in an airtight container and place in the freezer for up to 3 months.
  • Instead of Tuna, for an alternative you can use shredded chicken.
