Going Bananas! : Banana Coconut and Lemon Loaf

This is a great recipe to make for a shared morning tea or to keep in the fridge for unexpected guests. 

Banana's are usually quite cheap at the local supermarket so I always end up buying too many. This is perfect for using those slightly older, darker banana's that never got eaten in the fruit bowl.

Ingredients

  • 50g butter
  • ½ cup of honey
  • 3-4 ripened banana’s
  • 1 cup of flour
  • 1 teaspoon baking powder
  • 2 cups desiccated coconut
  • 4 eggs
  • 1 tablespoon natural yogurt
  • 1 tablespoon lemon zest
  • ½ cup of dates chopped- optional

Method

  1. Pre-heat oven to 180 degrees on bake. Greece and line loaf tin.
  2. Melt butter in a small saucepan. Add honey and gently stir until combined.
  3. Mash banana’s and sift in flour and baking powder.
  4. Add coconut, eggs, natural yogurt, lemon zest and chopped dates.
  5. Mix together until combined.
  6. Pour mixture evenly into loaf tin. Bake for 40 minutes or until golden brown and skewer comes out clean. Serve warm.
