Honey Soy Chicken Tenders with Asian Greens

Honey + soy + chicken= delicious!

​This is a really quick and easy lunch or dinner meal. With great flavours and textures it is sure to be a hit with the whole family. 

The awesome thing about this dish is you can make it as large or as small as needed depending on the amount of mouths you have to feed, just adjust all ingredients accordingly.

INGREDIENTS

Honey & Soy Chicken
  • 400g chicken tenderloins or chicken breast
  • ½ cup reduced salt soy sauce
  • ½ cup honey
  • 2 cloves garlic finely chopped
  • 1 teaspoon ginger


Asian Greens
  • 2 handfuls bok choy
  • 1 handful baby spinach leaves
  • 1 cup edamame beans
  • 1 clove garlic finely chopped
  • 1 teaspoon dried basil
  • Salt and pepper to season

Method

  1. Preheat oven to bake 180 degrees.
  2. Chop chicken into bite sized pieces.
  3. In a medium sized bowl mix soy sauce, garlic, honey and ginger. Add chicken to the bowl, cover and place in fridge for an hour.
  4. Remove from fridge and place chicken and remaining marinade on a lined baking tray.
  5. Place in oven for 30 minutes or until juices run clear.
  6. While chicken is baking, prepare the greens. Cut stems off bok choy and cut lengthways.
  7. Place a teaspoon of oil in a pan and add bok choy, spinach and edamame beans.
  8. Add garlic and basil and cook until greens are wilted.
  9. Serve chicken on a bed of basmati rice with the Asian greens.
  10. Enjoy!
