Slow Cooker Pulled Pork & Slaw

​This is a goodie! Put all ingredients in a slow cooker and keep the rewards at the end of a long day at work.

Pulled Pork

Ingredients

  • 1kg pork shoulder roast
  • 400g tin pureed tomato
  • 1 medium onion finely chopped
  • 2 cloves garlic finely chopped
  • 1 tbsp Worcestershire sauce
  • 1 tbsp dark salt reduced soy sauce
  • 1 tbsp paprika
  • 1 tbsp chilli flakes
  • Salt and pepper to taste

METhod

  1. In a slow cooker place tomato, onion, garlic, Worcestershire sauce, soy sauce, paprika, chilli flakes and salt and pepper. Stir through.
  2. Remove skin from shoulder roast and place the roast in the slow cooker. Cover with the sauce.
  3. Cook for 8 hours on low in the slow cooker. 
  4. Once cooked, remove from slow cooker and use a fork to pull meat into shredded pork.

Slaw Recipe

Ingredients

  • 1/2 red cabbage
  • 1/2 white cabbage 
  • 2 carrots 
  • 1 red onion
  • 1/3 cup olive oil
  • juice of 1 lemon
  • 1 garlic clove chopped
  • 1 tsp cumin
  • 2 tablespoons pumpkin seeds
  • Salt and pepper to taste

Method

  1. Finely cut cabbage into shreds. Grate carrots and thinly slice onion. Add into a salad bowl.
  2. In a seperate bowl combine olive oil, lemon, garlic, cumin, salt and pepper. Mix together until well combined.
  3. Pour dressing over the shredded vegetables and add pumpkin seeds. Mix through.

Serve pulled pork and slaw on a toasted burger bun. Try this recipe with home-made kumara chips on the side! (Recipe coming soon!)
